Mom’s Irish Soda Bread

2 ½ cups all-purpose flour
½ cup sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt (3/4 tsp if using unsalted butter)
Put all dry ingredients in a food processor and pulse a few times.
Then add

1 stick of cold butter (1/2 cup) cut up
Pulse until the mixture resembles small peas. You should see tiny bits of butter in the flour mix. The butter can be cut in by hand as well.

In a separate bowl mix
1 egg
1/3 cup sour cream (or less)

Then mix in
1 ¼ cups buttermilk

Put dry ingredients in a large mixing bowl.
½ – 1 TBS caraway seeds (opt.)
1 cup raisins (optional) or crasins
Mix well

Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix just until blended.
Transfer mixture to a round greased 9” baking pan.

Mix (Optional)
¼ cup melted butter
¼ cup warm milk
Brush loaf with this. You may brush more on the loaf during baking if you wish.

Bake at 350◦ for a glass baking dish and 375◦ for all other baking pans for 45-55 minutes .
